The churn is a horizontal cylindrical vessel made of stainless steel. Pallets are included within this vessel promoting the agglomeration of fat globules. Above the churn, a cold water spray cools the material during the tumbling. Then a valve located on the front is used to evacuate the air pressure after the first rounds of churning.
